I love the winter time. I love dressing in boots and scarves, going up to the mountains with my family, and evenings at home with warm soup belly.
Here is one of my favorite soup recipes: Spinach and sausage bean soup. Its an easy one if you are just getting started with cooking, but, as always, make sure an adult is there to help you. Especially when cooking up the sausages.
What you will need:
1 (32 oz) carton of low sodium chicken broth
3 Italian sausages (I use turkey) cut into chunks
1 pound of spinach, chopped
Salt and pepper
2 cloves of garlic, chopped
2 Tablespoons of olive oil
1 (15 oz) can of cannellini beans
Brown the sausages in olive oil in a heavy large pot over medium heat.
Add the garlic and saute about 15 seconds.
Add the spinach and saute for 2 minutes.
Add the chicken broth and beans.
Cover and simmer until the beans are heated through, about 5 minutes.
Season with salt and pepper, to taste.
